One last thing

Does anyone in Australia make their own seitan??

I'd love to know what brand of flour you use - we don't have Vital Wheat Gluten anywhere in Brisbane......

Hi Amy,

You have the same beautiful name as my girl. I LOVE IT!

As for yor seitan dont use the gluten flour. From my own experience it will get too hard. Do it the traditional method, use half white flour and half whole wheat flour. Wash off the bran by hand. It's well worth it in the long run......

I just looked up the recipe in La Dolce Vegan & I'm going to try on the weekend (tee hee - another reason to get out of writing my thesis)....

Found Gluten Flour @ the health food store @ Kenmore - made Seitan O'Greatness today - so good!!! Still want to try the traditional way (when I have more time to spare).....
