VeganMofo 2013: Day 2–the mac and cheeze-ening

Print
Hi everyone.  Hope you had an awesome first day of Mofo!
My theme for Mondays (and the official Monday theme for Mofo) is ‘Mac-and-Cheese Monday’.
I usually make a white sauce and add nooch to it for my go-to Mac and “cheese”.  It’s pretty much my favourite comfort food (and lazy food, happy food, I’m hungry food, I’ve had a shitty day food, etc).  Back when I ate meat and dairy it was still one of my favourite things to make.
So, today’s Mac and Cheese.
We used this product called Cherub Dairy-Free Cheesey Sauce Mix that Cam picked up ages ago from Green Edge.  Looks like it’s a product of Angel Food (NZ).  I think we still have a meringue sachet from this company in the cupboard.  I should see if that is still any good….

I also used the novelty home brand pasta from Woolworths.  I buy the novelty shapes a lot.  Cam never seems to mind, so I don’t have a problem with it.  I have been known to use novelty shapes before.
I also added broccoli (I have this rule that I won’t eat mac and cheese without a substantial green vegetable – in my mind it makes up for the lack of healthiness of everything else in the meal).

The verdict?  Cam quite liked it.  We added a fair bit of salt to it (probably because we’re salt fiends) but it seemed a little too subtle for my taste.  Next time I make it (I have enough mix left to make a cup of sauce) I’m adding nooch and a little powdered mustard.
I’ve used a few different Mac and “Cheese” recipes in the past – the lower fat New Farm Mac and Cheese recipe from the original Get Sconed blog site was good (now the version online is gluten free).  There’s also my ye olde standby (bastardised from a scalloped potato recipe from long long long ago).  Now I tend to add a few drops of liquid smoke to that.
What’s your favourite Mac and “Cheese” recipe?  Or do you prefer to use a mix?

I've seen that at The Green Edge, but haven't bought it. I normally make my own. I love the recipe from Vegan Diner, it is quick and seriously delicious. Also the recipe from Vegan Table, that cheese sauce is amazing! But it does take a bit more prep work. For super super super quick and tasty, I love the Three Nut Cheeze Wizz sauce from Quick Fix Vegan. It takes five seconds and is seriously amazing.

The nicest version I made was a Dreena Burton recipe ('mac oh geez') but I accidentally used a sweetened non dairy milk. Otherwise it was great and the consistency perfect :)

Cool. A friend posted this one to my facebook wall:

My fave cheeze sauce recipe is this one from Maple Spice - you don't have to bother cooking the flour and milk and Nuttlex first...you just mix it all together and cook in the saucepan. So eaaaaasy http://www.maplespice.com/2012/05/creamy-garlic-shells.html

Ooh, yum! I love how many emotions and situations call for mac n cheese! I hardly ever make it, but I have one on my list to try for MoFo!

I'm still on the hunt for my perfect mac and cheeze recipe. Lots of them involve miso, which I'm not entirely convinced by...

I haven't found my perfect mac and cheese yet either so I mostly just toss nooch, earth balance and garlic on noodles. It gets the job done. Those little pastas are adorable.

I agree on the miso suspicion. It just tastes odd.

Yum yum yum! I love vegan mac and cheese... sometimes I make a silken tofu based sauce to up the protein and others I do a more traditional white sauce but it's always a winner... if you're feeling adventurous pumpkin puree and tahini a re delicious additions x

love all your theme days - so many good mac and cheese recipes for vegans - I love the vegan yum yum hurry up alfredo - that is the one I return to most

Johanna - is that the one full of tofutti cream 'cheese'? I think I made that once and couldn't justify the expense again!
