Tasty Tofu Stir Fry

I know this one isn't very original, but highly tasty!!!
Amy's Tasty Tofu Stir Fry
Ingredients: Cooking Oil, Garlic, Ginger, Diced Onion, 2 cups chopped mushrooms, Packet Sweet Chilli Tofu Nuggets, Mixed Stir Fry Veggies (I use the frozen ones 'cause I'm lazy), Chopped Chilli (fresh or from a jar), Hoisin Sauce (Changs' is vegan), Sweet Chilli Sauce.
To Cook: Fry the garlic, ginger and onion in cooking oil until the onion is golden brownish. Add in the mushrooms & cook until the mushrooms release their juice. Add in the Tofu & fry for a minute. Add in the veggies and stir fry until warmed through. Add in the sauces to taste.
You can serve this with noodles or rice - my favourite noodles are the thin hokkien (there are lots of vegan brands out there - especially the room temperature ones).
Enjoy with chopsticks - they're much more fun than a knife and fork!!!

Coconut Choc-Chip Cookies

Here's some Coconut Choc-Chip Cookies I made a few weeks ago. They're mighty tasty.....

From La Dolce Vegan by Sarah Kramer (p218). I made a batch for work & people have been asking when I'll bring in more ever since!

They're fairly high in fat, but if you use low-fat marg, you need to add in about a 1/4 cup extra flour - otherwise they're too runny.
